A disc of cream-colored sugar studded with toasted pecans, melting on the tongue before you can really chew it. National Pralines Day, observed every June 24, celebrates one of the great Southern candies — a humble, deeply regional confection that traveled from a French royal kitchen to the streets of New Orleans and never quite left.

The praline is two candies, really. The French original is a hard sugar-coated almond, dense and snappy. The Louisiana version is something else entirely — a soft, brown sugar–and–cream patty packed with pecans, made on marble slabs and sold from candy counters along Royal Street. The American praline is one of the few foods where the recipe was so transformed by its new home that the copy outshone the original.
